土日２週連続で休暇が取れない。って英語でなんて言うの？

仕事が忙しすぎて、土日の休みが２週連続して取れません。もしかして３週連続して取れないかも。

1) I've been so busy at work I had to work the last two weekends.
「仕事がとても忙しくて、先週と先々週の週末は仕事だった。」
「休みが取れない」ということは「仕事をしなければいけない」ということなので、I had to work を使って言うことができます。
３週連続で週末仕事だったなら、 the last three weekends となります。

2) I've been working so much lately that I couldn't even get the last two Saturdays or Sundays off.
「最近仕事が忙しくて、先週も先々週の土日も休みが取れなかった。」
「休みが取れない」は can get the day off 
３週連続土日の休みが取れなかったなら、couldn't get the last three Saturday or Sundays off となります。
