one of them 二人のうちの一人がと言う意味として使います。
この場合はっきりと二人とは言いませんが、状況によっては、二人と言わなくても伝わると思います。例えば目の前に従業員が二人いる場合とか、に使えます。ですがそういう場合では無い時には I believe that one of the two employees will be at the shop after lunch. と言うと伝わります。
