日本語の通り「週末を挟む」と英語で言うと可笑しな表現になってしまうので、下のような言い方にしてみました。
1) Sorry for the delay getting back to you. It ran into the weekend.
「週末に当たってしまい、連絡が遅くなってすみません。」
run into the weekend で「週末にぶち当たる」
2) My apologies for the late response. The weekend slowed things down.
「返事が遅くなりすみません。週末が入ると業務のペースが遅くなってしまうもので。」
slow things down で ペースがゆっくりになるというニュアンスで、この場合は業務のペースがゆっくりになると言う感じでしょうか。
