というのは文法的には正しいですが、一番言いたいことが「I had lunch」になってしまいます。
whileなどは「“従属”接続詞」ですから、その後に来る文はワキ役的な意味合いになるのです。
おそらく「じろじろ見ていた」方が大事なんじゃないかと思いますので、
以下のように訳してみました。
She started at me the whole time I was having lunch.
the whole time... は「～の間ずっと」ということですね。
My girlfriend just kept staring at me the whole time I was eating.
She never took her eyes off me the whole time I was eating my lunch.
この場合、次のような言い方ができますよ。
ーMy girlfriend just kept staring at me the whole time I was eating.
「彼女は私が食べている間ずっと、私のことをジロジロ見ていた」
ーShe never took her eyes off me the whole time I was eating my lunch.
「彼女は私がランチを食べている間中、私から目を離さなかった」＝「私のことをジロジロ見ていた」
