I'd like a twenty (two tens) and the rest in coins (,please).
a twenty-dollar noteを略した形で、a twenty、two ten-dollar notes を略した形で、two tensを用いたりします。
両替所でしたら、ほぼ略した形で通じます。
a five/four fives というような具合です。
the rest in coinsで、「残りを硬貨で」という意味合いになります。
もっと高額な両替（$100）だった場合、略した形での表現がより便利になりますよ（＾＾）

一番最初の文が一番明確できっちりした文章になりますが、二番目でも十分通じますし、もっと簡単に三番目でも大丈夫と思います。
２０ドル紙幣は単に Twenty (20) と言ってもこの場合は紙幣のことを言ってるのがわかっているので大丈夫です。
もし１０ドル紙幣が二枚欲しい場合は "Two tens" と言えばいいですよ。
１０ドル分のコインも何がいいか、と聞かれる可能性もありますね。大抵はクォーターと言われる２５セント硬貨になると思いますが、もしこれも指定があれば、"Five in quarters and the remaining five in dimes, please." などと言ってもいいですよ。

In the US, bills is used to describe paper money.
In the UK, notes is used to describe paper money.
Normally when exchanging money at a Forex Bureau , they may not be able to give you coins, but only smaller notes/bills.
