Interrupting someone is generally considered rude so don't be afraid to use a strong phrase like "Stop interrupting me"
You could soften it a little like "Jake, could you stop interrupting me? I'm trying to tell you something important."

To hear someone out means to listen to the person until they are finished speaking.
It's a non-confrontational way to ask them to hear your opinion or viewpoint before drawing a conclusion.
Asking them to listen to your side of the story will let them know that you are explaining what has happened from your perspective, and in order to understand what you mean they would need to listen attentively.
"hear someone out" は「人の話を最後まで聞く」という意味です。
