「腹八分目」に合う英語はないので近い表現を２つ選んでみました。
1. I want to eat moderately.
この表現は、「食事をほどほどにしたい」というニュアンスです。"Moderately"は「適度に、ほどほどに」を意味する言葉です。
"In order to maintain my health, I try to eat moderately."
「健康を維持するために、私は食事をほどほどにするよう心がけています。」
2. I shouldn't eat until I'm full.
2つ目の表現は「満腹になるまで食べてはいけない」という意図を伝えています。「Until I'm full」は「満腹になるまで」で、これは「腹八分目」の概念をよく表しています。
"I've been told to maintain a healthy diet, which means I shouldn't eat until I'm full."

英訳3：be completely stuffed や be completely full で「満腹になる」となります。
