Stop thief! = A thief is a person who steals something from another person. 'Stop thief!' is a traditional exclamation for the public to tak action and try to stop the thief from escaping with the stolen goods.
"The thieves snatched the man's camera and he cried, "Stop thief!"
Get him! = This means 'catch' or 'detain' someone.
"The man tried to escape but the crowd of bystanders got him."

Both sentences are good to use. You want to keep the sentence short in order the for the people to react quicker.

In this situation its not always what you say but the way you say it and how loud, as you are trying to get people attention to stop the person who has stole your bag
So simply " stop that man" or "stop thief " would do as long as you got peoples attention and said it nice and loud you need to get the point across quickly before the thief escapes
