my son's future wife で「息子の将来のお嫁さん」＝「婚約者」と言えます。
この言い方が自然かなと思いますが、「挨拶と食事を兼ねて」と言いたい場合、次のように言えるかと思います。
ーI'm going out for dinner with my son's fiancée's family this weekend, this way I can meet them and we can share a meal together as well.
「今週末、息子の婚約者の家族と夕食に出かけます。そしたら挨拶を兼ねて食事も一緒にできるので。」
fiancée で「婚約者（女性）」
この場合の「挨拶」は meet を使っていうのが一般的です。
