end up~ は「〜に行き着く、結局」みたいな意味ですね。ended up struggling with language barriersは結局言葉の壁で苦労したと言う意味になります。
例えば言語で苦労した時に、
はぁ～こうならないため(言葉で)苦労しないためにインター通っていたのになぁと言いたい時に
