なんて思わなかった！のを表現したいです。

Yoshieさんのおっしゃる通り、I didn't think it would be this sweet. だと「こんなに甘いと思わなかった」という意味になります。
I didn't think it wouldn't be this sweet. は不自然です。日本語の通りに訳すと自然ではないので、次のように言うと良いでしょう。
ーThis cake is not sweet at all. I wasn't expecting that.
「このケーキは予想外に全然甘くない」
ーThis cake is not as sweet as I thought it would be.
「このケーキは思ったほど甘くない」
ーI thought this cake would be much sweeter.
「このケーキはもっと甘いかと思った」
