"What's the date today?" は日付しか聞いていないので、曜日までは答えてくれないかもしれません。
"What day is it today?" は曜日を聞いている質問になります。
なので、両方を知りたいときは "What day and date is it today?"＝「今日は何曜日、そして何日だっけ？」と聞くのが良いでしょう。

この場合、次のような言い方ができます。
ーWhat's the day and date today?
「今日は何曜日の何日ですか？」
ーWhat's the date today and what day is it?
「今日は何曜日で何日ですか？」
What's the day (of the week)? で「今日は何曜日ですか？」という聞き方です。
What's the date today? で「今日は何日ですか？」という聞き方です。
What day is it? でも「何曜日ですか？」と聞けます。
