子が成長したのでbooster seatを取り付けたって英語でなんて言うの？

この場合、次のような言い方ができますよ。

ーMy son got bigger, so we took out his car seat and replaced it with a booster seat.
「息子が大きくなったので、カーシートを取り外してブースターシートにした」
to replace A with B で「AをBと取り替える・交換する」

ーWe put a booster seat in our car for our son because he outgrew his child seat.
「息子はチャイルドシートには大き過ぎるので、ブースターシートを取り付けた」
to outgrow で「大きくなり過ぎる」
