この場合、次のように言うと自然な感じで良いですよ。

ーI went to the bakery to buy bread that I like, but it was still in the oven, so I couldn't get it.
「お気に入りのパンを買いにパン屋に行ったが、まだ焼き上がっていなくて買えなかった」
焼き上がり時間より早かったことは、「パンがまだオーブンの中に入っていた」＝「まだ焼き上がっていなかった」と言うと良いでしょう。

例えば、
I went to the bakery but couldn't buy the bread I wanted because I arrived earlier than the scheduled time for it to be ready.
とすると、『パン屋さんに言ったけど、欲しかったパンの焼き上がり時間より早かったから買えなかった』と言えます。
