補足ですが、アメリカでは12月31日など、まだ元旦を迎えていなくても、
Happy New Year!!とお祝いするんですよ。

"How'd you spend the New Year's?"
「How'd」の部分は「How did」の省略です。
We often cut off words like did or is when combined with the word "How"...example: How's your day going? How'd you do that?
In the other example "What did you do for New year's?" you can ask what the person did like you would ask in Japanese 「正月は何してたの?」It's a pretty casual and straightforward way of asking.
You could also say " What did you do over New Year's?" or "How did you spend your New Year's holiday/vacation?"
You would say holiday or vacation in a situation in which you didn't see the person for a couple of days or weeks and you didn't hear much from them.
"How'd you spend the New Year's?"
「How'd」の部分は「How did」の省略です。
"How"の疑問詞の後にdidやisが来るとき良く省略され次のようになります。

This is a straightforward way to ask someone what activities they were involved in during the New Year's Holiday.

To "get up to anything interesting"is to do something our of your usual routine.

Asking an open question may lead to a more detailed response so you could try:
