「運が良い」は lucky で表現できますね。
「運が良かった」の「た」につられて、過去形（was lucky）を使ってしまいそうになりますが、日本語の「た」は、必ずしも過去のことではない場合があります。
例えば、「〜選手、ホームラン、打ちました！」は、今まさに起こったばかりのことですよね。
今回の場合の「運が良かった」も、「まさに今、先生のレッスンを受けられていて、それが運が良い」ということだと思いますので、I'm lucky を使います。
「〜して嬉しい」「〜して悲しい」などの、「〜して＋感情」を表現する場合には、「〜して」の部分を to~ で表現します。
I'm happy to see you again.
（あなたにまた会えて嬉しい）
「レッスンを受ける」は take a lesson, take ~('s) lesson で表現できますので、「先生のレッスンを受けて」は to take your lesson になります。
「先生は人気で、レッスンを予約するのが難しいから」と付け加えたければ、次のような表現をその後に言えば伝わります。
because you are popular and it's difficult to book your lesson.

If you are privileged, or feel privileged for any reason then it means that you believe you are fortunate, possibly lucky, possibly exceptional or specially chosen. It is a positive feeling such as being invited to Buckingham palace for a meal with the Queen, for example. In that case, you could also say that you feel 'honoured' to have been invited - although that is probably too extreme an adjective to use in the presence of an English teacher.
be privileged または feel privileged というと、何らかの理由で幸運、ラッキーで特別に選ばれたと思っている状態を意味します。
例えば、バッキンガム宮殿での女王と食事に招待されたと感じるような素晴らしい感覚です。
この場合、招待されてhonoured「光栄である」と感じると言うこともできます。
でも一方で、英語の先生に対して使うには少し大げさな表現かもしれませんね。

to find an opening - this means to find an open slot of time (in your schedule, or in someone else's schedule)

to 'book' the lesson means you put your name down to do the lesson/class, if you 'take' the lesson then you have actually done the lesson/class with them
