咄嗟でsorry , Are you okay !?しか出てこなかった、、、
似たバージョンで例えば椅子を倒しちゃって近くの人に「当たりませんでした！？」とかもバリエーションとして教示頂けますか？

質問者さんは、Sorry, Are you okay!?しか出てこなかった、と仰ってますが、それはとても良いのですよ(^^) 私は生徒さんに必ず、Sorryを初めに言いなさい、と教えています。会話によっては他のフレーズから始めると嫌な感じに聞こえてしまう時があるからです。Sorry!ではじめておけば、謝っているんだと正しく理解してもらえるので、トラブルが最小限におさえられますからね。
あとの部分は、
私が（もしくはそれが）〜をしませんでしたか？という形、Did I (it)~?という形で応用がききますよ。
かからなかったですか？
↓
Did I spill on you?
（直訳：わたしはあなたにかけてしまいませんでしたか？）
椅子が当たりませんでしたか？
Di it hit you? / Did the chair hit you?
最後に、よくある、人混みで誰かの足を踏んでしまったら...

In this unfortunate situation, you hope desperately that the other person is not inconvenienced very much. So for example, you may have just spilt a little juice on the floor. You could say:
"I hope I didn't spill any on you!"
"Just a little on my shoe, but it's OK."
However, if it turns out that you did spill some on their dress. blouse, trousers etc - but they seem not to worried, you could make a joke of it:
"You should have brought your bathing costume!"
You could just say, "Oh I'm so sorry," as that phrase would cover any spillage, large or small.

ただ実際に、Sorryと言うと、相手がいじめる気になることがあります。
Sorryと言わない言い方として、びっくりした表現に、淡々と「I hope that it did not reach you」（かからなかったなら良いですが）を使えば良いです。
また、椅子が倒れたなどの話でしたら、同じくびっくりした感嘆詞に、I hope that it did not hit you（当たらなかったなら良いですが）になります。
