どちらも「どの映画が見たい？」という表現です。

→映画館で映画を見る場合は、see a movie. 映画館では、大きな画面で、映像が目に飛び込んできますよね。なので、seeを使います。
→家で映画を見る場合は、watch a movieと使うのが一般的です。家では、テレビやパソコンの画面で映画を見ますよね。意識を画面に向けないと映像が見られないため、watchを使います。

To take one's fancy = if something takes or catches your fancy, you like it, or you want to have or do it.

It may be an idea to let your date choose the film. But if you do that, you will have to accept the selection even if you do not like the choice!

To take one's fancy =take/catch your fancyとは、それが好き、あるいはやりたいと思、という意味です。

There are some great films on at the cinema, which film shall we go see?
I have provided two answers, The first one is more suited to a first date and asks the date out and then which film they would like to see. The second answer is more suited to taking someone you have been out with before.
You can ask "What movie would you like to go and see?" Then you can check whether you have seen it, but it gives your date the chance to let you know if there is something they would like to watch. In the expression in "Do you have a preference for a movie?", it is a little more open-ended and they may say no, so you will have to choose.
By saying "Please choose what we will watch at the cinema?" You are directly asking them to make the decision.
