接客スタイルって英語でなんて言うの？

「接客スタイル」は、service style, the style of serving, the way (that) we serve などがあります。
「〜に応じて」は、depend on〜 の他に according to〜, based on〜 でも良いでしょう。

the knowledge customers have は、the knowledge (that) customers have と、関係代名詞が省略されており、「顧客の持っている知識」となります。
the items they demand も同じく、the items (that) they demand で「彼ら(顧客)の求める商品」となります。前に "customers" があるので、重複を避ける為に "they" としています。

「求める」は demand の他に、require, want, need も同じように使えます。「商品」は、item, product, goods, article などがあります。

別の言い方として。

wayは方法、to serve customersは接客すること、という意味です。
