1番目と2番目の違いですが、
1番目は「スターウォーズ（最新作）を（映画館で）観た」と捉えます。 なぜ最新作とは書いてないのに最新作と理解できるのか？というと過去形だからです。 「観ました」となります。 今はまだ映画館でスターウォーズ最新作が映画館で上映されていますから、特にそう捉えられます。 これが映画館で上映されてないなら、過去にどれかの作品を観たという事になりますが、今話題になっているのが「フォースの覚醒」ですので、この作品を意味する事が多いです。
2番目は
a) 観た
b) 観たことがある
c) すでに観ました
という３つの種類に分けられます。 特記したいのは「IMAX 3D」という特殊な映像で観たという事になります。 調べてみますと日本では９カ所で上映されています。 これをIMAX 3D 観たのであれば、a)になりますし、以前の作をIMAX 3D 観たのであればb)になります。 話の流れによってa) なのか b)なのか捉え方が変わります。 いきなりI've seen Star Wars in IMAX 3D と言われると、私の場合は a) (最新作) で理解します。 c)の場合は、I've already seen...というように alreadyという言葉が入ってくる可能性が高くなると思います。
いずれにしましても、Star Wars in (IMAX) 3D という表現方法になるかと思います。
