縦向きはvertical（またはportrait）、横向きはhorizontal（またはlandscape）といいます。Portraitとlandscapeはワードなどで[印刷](https://eikaiwa.dmm.com/uknow/questions/58024/)の[向き](https://eikaiwa.dmm.com/uknow/questions/59698/)を選ぶ時に使う言葉です。
例）
Would you like your document to be printed in portrait or landscape?＝書類の印刷は縦向きと横向きのどちらにしますか？

Sidewaysはあまり日本では耳にしませんがアメリカではよく耳にしました。

丁寧に〇〇をお願いします・・・と言いたい時に使えるフレーズですね
英語で「縦に」は vertically になり、「横に」は horizontally になります。
なので、「写真を「縦向き or 横向き」で撮って下さい」と言いたいなら Could you take it vertically/horizontally と言えます。
しかし、指定しないとデフォルトで縦に撮る人が多いので、Take it vertically とはあまり使わないと思います。
また、Take it horizontally のもう一つの言い方は Take it sideways です。
実は、Take is horizontally より Take is sideways の方をよく聞くと思います。

You can politely ask for the picture to be taken either horizontally (landscape) to capture the head and shoulders of the person, or vertically for a picture the person from head to toe.
The first phrase can be used if they are getting ready to take the picture one way, and you would like it taken in the other way. If this is that case then you can say "Could you please turn it the other way?"
The second phrase, "Could you take the picture landscape/portrait?" is something you could say when you pass your phone to someone and you specify which you would like.

A wide shot photo usually refers to a landscape photo where more of the surroundings are visible in the photo.
A full body photo refers to a portrait photo where more of the person can be seen from top to bottom with less of the surroundings.
