Used to – before. Now – talking about present, your favourite colour is yellow. You can switch the sentence around. “My favourite colour is yellow but it used to purple”.

Purple used to be my favourite but now I prefer yellow.
Used to – in the past. Now you prefer yellow. Prefer is the one you like/love better. Yellow has taken your preference so now it replaces purple as your favourite colour. “I prefer chocolate to candy”, “I prefer to exercise outside instead of at the gym”. (Which one you like better).

These days = at present.

Used to = 過去の習慣的にしていたことを話すときに使われる表現です。

過去のことは (used to… ) 昔は…だったというのが決まり文句です。
Used toの文は、昔は…だったけどとbutの意味も含んでいるので今は紫よりも黄色が好きといことになるので
I used to like purple, but I prefer yellow.
I used to like purple, but I like yellow better now.
などと言うこともできます。
