「フランス人は親切じゃないイメージがありました。でも行ってみたら親切な人にたくさん出会ったのでイメージが変わりました。
こういう日本語は分けて言うといいですよ。無理に１文で一気に英語を言おうとすると、こんがらがります。私は、「フランスに行く前」と「フランスに行った後」に分けました。
「イメージ」impression / image どちらもこの文脈だと同じ意味です。「冷たい人」の英語はcoldも使えますが、聞こえが悪い（これは主観です）。イメージで物事を言っている段階なので、なるべく聞こえが悪くない言い方がいいなと個人的に思ったので、not friendlyという表現にしました。
「（旅先で）人に出会う」は、encounter / come acrossと言います。
