レストランやカフェなどの場合は自分じゃなくその店や会社を代表していますので、I'llじゃなく、we'll 使います。

席が空いたら

Opens up とは、「空く」という意味、質問の文では「満席から席が空く」という意味になります。例文を挙げておきます。

席はすべていっぱいです。満席です。

連絡しますは "We'll let you know"（カフェの店員の誰かが連絡する場合）
