If someone asks me if I am English I would reply with any of the above phrases.
What do you think? Gives the other person the opportunity to answer so you have to say nothing because sometimes the questions are very personal and none of their business.
Do I look like I am? or Do I look like it?
This also reflects the question back to the other person.
If you don't want to answer a personal question you could just smile and say 'I might be, I might not be '

*Do I look Chinese/rich to you?-This is a way to see what they think and to show that you are not comfortable talking about it.

We can often make "SNAP JUDGEMENTS" (idiom) that can turn out to be competely wrong! If someone makes a mistake...we can politley refute their judgement and clarify the situation...Try not to be upset or offended, its better to simply ask...

"Huh" or "uh" can sound similar to 「え」when used at the start of a sentence. If you say them to sharply it can sound very harsh.
The softest way to say it would be "is that how you see me?" but none of these versions are impolite.

Sometimes, when someone asks you about what you are, rich or Chinese, that person will already have formed an opinion about you and just wants confirmation. The best thing to do is to ask him/her back and find out how he/she sees you or what you look like to him/her. Alternatively, you may ask what his/her opinion about you is, or, if you look rich/Chinese.
So, you may ask as follows:
How do you see me? What do I look like?
or
What's your opinion about me? Do I look rich /Chinese?
人に、金持ちであるかとか中国人であるかとか聞かれたとしたら、その人はあなたについての意見をすでに持っていて、それについて確認したいと思っています。
一番いいのは、自分がその人にどのように見えているのか聞き返すことです（＝例1）。もしくは、相手の自分に対する意見を尋ねたり、自分が金持ち/中国人に見えるか聞くこともできます（＝例2）。

Responding to a question with a question may be taken as being quite sarcastic and unhelpful, so what you say exactly very much depends on the scenario taking place. If you find the question objectionable, then the example sentence is probably quite an appropriate response.
Sometimes people forget their manners and may ask inappropriate questions. If someone happens to ask you this, there is no need to be offended. You can simply just say do I look rich or Chinese and move on from there.
