I'm sorry?
みなさん謝る時に "I'm sorry"を使うかと思いますが、相手の言ったことを聞き返す際にも普通に使えます。イントネーションを上げるのを忘れずに！

意味が分からないときに聞き返すというよりも、聞こえなかったときに聞き返す際に使います。

無難な聞き方です。
Do you mind repeating what you just said?
As you are requesting a person to say something you did not hear, it is polite to use a ''polite phrase'' such as ''do you mind +ing...''
I'm sorry, I didn't catch that.
You can say this when you did not understand or hear what someone said to you.
【例】
Do you mind repeating what you just said?
（今言ったことをもう一度いってい頂けませんか？）
あなたが、何か相手が言った事を聞き逃したので、
もう一度言ってほしいのとお願いしているので'
'polite phrase'（丁寧なフレーズ）を使いましょう。
'Do you mind +ing...''（～していただけませんか？）のような。

I'm sorry, I didn't catch that.
（ごめんなさい、聞き逃しました）
これはよく理解できなかった時や、よく聞こえなかったときに、
この表現を使うことが出来ます。
"Sorry, could you repeat that please?" - Formal and a standard way of asking someone to repeat the question they've just asked.
"Pardon, what was that?" or "Pardon could you repeat that please?" - Very formal and polite. The word "Pardon" is very sophisticated but you can also replace it with "Excuse me" as in "Excuse me, could you repeat that please?"
Come again? - Informal & casual. You can use this with friend, family however it is very casual and everyday English.
"Sorry, could you repeat that please?"

この "Pardon"（すみません）とはとても洗練された言葉ですが、 "Excuse me" （すみません）と置き換えることも出来ます。

お友達や家族に使ことが出来ます。
でも、とてもカジュアルな日常英語です。

To repeat something means to say it again an informal way to say it would be 'i'm sorry i didn't catch that!
By adding please you are asking in a nice/polite way
冒頭で”Sorry"と言うことで、相手に申し訳ないという気持ちを伝えます。
何かを”Repeat"は「繰り返す」という意味です。カジュアルな言い方にすると、”I'm sorry I didn't catch that”（すみません、聞き取れませんでした）となります。
”Please"を付け加えると丁寧な言い方になります。
All three of these sentences address your problem well. The first two are more formal ways of indicating that a question needs to be repeated.
The third sentence is a more informal way to ask for a question to be repeated.

一般的な聞き方です。
I beg your pardon?
とても丁寧な聞き方です。
ただ、この文を強い口調で言うと全く違うニュアンスになります。
例えば相手があなたに対して失礼な発言をしたときに怒り気味にI beg your pardon? と言うと「あなた今なんておっしゃいました⁉︎」「今言った言葉もう一度言ってごらん！」という意味になります。
英語を習いたてだった頃の私が間違って失礼なことを言ってしまった時に、I beg your pardon? と怒り気味に言われたにもかかわらず、よく分からなかった当時の私は素直にもう一度繰り返して相手の怒りを買ってしまったことは今となってはいい思い出です。笑
Can you repeat that? Asking them to say the phrase again may help to clarify the whole sentance.
Sorry , I couldn't hear you can you say it again? Apologising and stating the problem often helps when listening for the second time.
"Can you repeat that?"（もう一度言ってもらえますか）
もう一度言ってもらうということに加え、文全体の意味を明確に説明してもらえるかもしれません。
”Sorry , I couldn't hear you can you say it again?" （すみません、聞こえなかったのでもう一度言ってもらえますか）
聞き直す際には、なぜもう一度言ってもらうのかその理由（この場合は聞こえなかった）とsorryを一緒に言うとより丁寧でしょう。
