「雨が降っていたけど、途中から雪に変わった」
ってなんていいますか？
I guess “it was raining but the rain turned into snow sonner”.
「途中から」という表現が難しいので教えていただけると助かります！

こんにちは。回答が遅くなり申し訳ありません。
おっしゃる通り、「途中から」が難しいですね。
ただ、「雨が降っていて、それが雪に変わった」
ということであれば、文脈的に「途中から変わった」ことは
ほぼ明らかですので、特に何も言わなくても良いのでは、と
個人的には考えております。
もしそういった「途中で」のニュアンスを表現されたい場合は
later「のちに」という言葉を使うと良いでしょう。
turn into snow later はネイティブも用いる表現です。

In the first example it just states that before it started to snow it was raining. Second example expands a bit by giving a reason. It was so cold.
最初の例では雪が降り始める前に雨が降っていたということを単に言っています。2番目の例では、理由を挙げて少し説明しています。とても寒かったということです。

You can say "it was raining earlier then it turned into snow" to express that the weather started off with rain and then turned into snow. Or you can say "it rained until it started snowing".
"it was raining earlier then it turned into snow"（最初は雨が降っていたけど、その後雪になった。）
上記のように天気が雨から始まり、途中から雪に変わったと表現することができます。または、下記のように同様の意味で表現することができます。
"it rained until it started snowing".（雪が降るまで雨だった。）
