A lot of times when people talk about growth, they talk about the rate at which something grows and for children there is no difference.
There are plenty of adjectives that can replace 'surprised' like: shocked, amazed, in awe, shook, and others.
You could also make the growth the subject and make it belong to another possessive subject, in this case the child.

The two sentences you see provided above are excellent ways to express to your listener that you are surprised by how much your kids are growing. In the second sentence you will see the term grow like weeds. This means to grow very fast. This is a term that is used in informal settings, like talking with friends or family.
