'I ended up~' = 「結果的に〜になる」
'sleep late' = 「遅く寝る」「寝るのが遅くなる」
'into ~' = 「〜に夢中」
「サッカー観戦に夢中になっていて結果的に寝るのが遅くなった」
'sleeping late' のかわりに 'going to bed later' 、または直訳で「長く起きていた」という意味の'staying up late' や 'staying up longer' でもOKです。
>> 'I ended up staying up longer because I was so into the football game
>> I ended up going to bed later as I was really into the football game
I became absorbed watching the soccer, and didn't go to bed until it was late.

「夢中になる」という部分は become absorbed で言えます。
