「聞き取れなかった言葉」ということですので、
the words (which) I couldn't catch（follow）
と表現すれば良いと思います。
「聞き取る」はcatch, followを使います。

という意味です。
whatは関係代名詞で「～のこと、もの」
という意味になります。
