The point is ~ はよく使うけれど、~is what it's all about はあまり日常会話では聞きません。
私だったら、The most important thing is~ を使います。
本当に強調したい時は、その前に、at the end of the dayと言います。「結局」という意味です。
例 : At the end of the day, the most important thing is to win.
シチュエーションによって使い分けられるのでご質問にあるwinning is what it's all aboutも勿論使えますよ。これはスポーツなどの競技とかを見る時に一番使いそうですね、それかビジネスの世界やギャンブル等とか。
The most important thing is~が幅広いシチュエーションで使える無難な表現です。
それか普通にmy point is/the point is/the most important point is等も使いやすいです
