確かに 'for the ～' は間違いないのです。
もっと短くて、ナチュラルっぽいように 'on the ～' も言えます。
例えば：Can I get mayonnaise on the roast beef, and ranch, oil and vinegar on the spicy Italian?
質問者さんが仰るようにサブウェイの例ですと、"for the Roast Beef, can I get mayonnaise?" は「ローストビーフサンドイッチにはマヨネーズでお願いします」という風な解釈で正解です。
他にも、「雨の場合は…」などは "In the event of rain..." と言います。
