1. I enjoy running in good weather.
When we say that we enjoy something, it means we get pleasure in doing that thing. This sentence says that we find pleasure in running in good weather.
2. If the weather is good, I like to go running.
This sentence say that you like t ogo running but only if the condition is fulfilled. That condition is that the weather must be good.

These expressions here are explaining that one enjoys running when the weather outside is nice, being nice it is referring to nice enough weather to run, example, it is not raining or snowing.
To 'enjoy' something is the term used to describe something that you like and have fun doing.
