「It takes a lot of effort to〜」はよく使うフレーズなので是非覚えておきましょう。
In the first statement, the present continuous tense 'I am finding', has been used, to mean that you have been continuously trying to stop smoking, but, you are finding it 'extremely' hard to do so. The adverb 'extremely' has been used to mean 'very'. In the second statement, the phrase 'not finding it easy' has been used. This phrase is just the same as the phrase, 'finding it hard'. In the third statement, the adjective 'difficult' has been used to mean 'hard'. If you are in this situation and want to let a friend know about it, you may say:
I am finding it extremely hard to quit smoking.
or
I am not finding it easy to stop smoking.
or
It's difficult for me to quit smoking.
最初の英訳例では、あなたが禁煙をするために継続的に努力してきたものの、それが非常に難しいと感じていることを示すために、現在進行形 "I am finding" が使われています。
"extremely"「非常に、きわめて」という副詞は "very"「とても」を意味するために使われています。
2つ目の英訳例では、"not finding it easy" というフレーズが使われています。このフレーズは "finding it hard" と同じ意味です。
3つ目の英訳例では、形容詞の "difficult"「難しい」が "hard"「大変な」という意味を示すために使われています。
もしこのような状況にいて、友人に伝えたいのであればこれら3つの英訳例を言うがいいでしょう。

▪ To quit smoking is not easy.
"not easy" is difficult.
This clearly means that it is difficult to quit smoking.
▪ I would have never thought that quitting smoking will be so difficult.
"never thought" is saying that you had no idea of it.
This is saying that you had no idea that quitting smoking is so difficult.

（たばこを止めるのは簡単じゃない）
"not easy"とは"difficult"（難しい）という意味です。
これは、明確にタバコを止めることは難しい、と言う事を言い表しています。

▪ I would have never thought that quitting smoking will be so difficult.
（タバコを止めることがこんなに難しいとは思わなかった）
"never thought"とは、今までそのようなことはを考えもしなかった、というような意味になります。
これは、たばこをやめる事が難しい事だとは思ったこともなかった,という様な意味になります。
