英語で温度に関わらずwaterと言います。そしてお湯も水もwaterという言葉を使えます。
そしてyou had better convert it to waterはちょっときつくて、不自然な言い方です。
水道のコックが熱くて、冷やしてくださいということだったら、一番目を使います。
何か修理を頼むときに二番目を使います。

この場合、次のような言い方ができますよ。
ーPlease turn the tap back to cold water when you are done using the hot water.
「お湯を使い終わったら、水栓を水に戻してください」
to turn the tap back to ... で「栓を…に戻す」
