「飛び級」は grade skipping と言います。「飛び級をする」は skip a grade になります。また、飛び級のように普通より先に進ませることを academic acceleration と言います。acceleration は「加速」という意味です。
例：
I skipped a grade in elementary school.
小学校で飛び級した。
アメリカでは、少なくとも僕が育ったカリフォルニアでは、飛び級や academic acceleration はよくあることでした。僕も１学年飛び級したことがあります。GATE（Gifted And Talented Education）や AP（Advanced Placement）という制度・授業があり、普通の授業とは別のカリキュラムで勉強したりします。高校の AP では大学レベルの授業を受けることが多いです。

スキップする、と最近は日本語でも言うようになりましたね。
朝食を抜くのはskip breakfast、授業をサボるのはskip classです。
