「充実した日々」というのは stimulating days で言えます。
これが（刺激的日々）という意味になり、「充実した日々」と相当する表現になります。

ご質問通りに「過ごせる」の動詞を使いたいなら最後の「fruitful days」を使った方が良いと思いますが、その言い方をする人はあまりいないかも知らないです。
I want to study a lot in Japan before I go, so I can spend fruitful days while studying abroad.
2番目の「live every day to the full」と1番目の「make the most of my time」はどちらも動詞を変えないといけない。
I want to study a lot in Japan before I go, so I can live every day to the full/ make the most of my time while studying abroad.
「make the most of my time 」の方が一般的に使われているかと思います。「time」の他に「money」、「experience 」、「opportunity 」などの言葉も変えられます。
