詳しいシチュエーションがわかりませんが、この２人の元同僚のことを別の人に話しているのですよね？でしたら、下のように言えるかと思います。
A guy I used to work with quit his job, and another guy is thinking about leaving the company too.
「同僚の一人は仕事をやめて、もう一人も会社を辞めることを考えている。」
An old friend of mine from work left his job, and someone else I know is also thinking about quitting.
「職場の古い友人が仕事を辞めて、もう一人の知り合いも辞めることを考えている。」
ちなみに AKIHOさんの例文でも大丈夫ですが、誰について話しているかがわかっている前提です。

まず、quit a jobをquite the jobにします。
そして、One of them... and the otherかOne of them... and anotherかどっちかを選ばないといけません。2人だけの話ではthe otherを使えます。何人かの話に対してはan anotherを使えます。
