I think it is hard to do housework and take care of children at the same time.
家事をやるのと子どもたちの面倒を見るのを[同時に](https://eikaiwa.dmm.com/uknow/questions/32144/)するのは難しいと私は思います。
「[育児](https://eikaiwa.dmm.com/uknow/questions/50838/)」は raise a child という言い方がありますが、「子どもを育てる」という意味であり、しつけや教育ほか金銭的な面も含まれることが多いです。今回のような場合、子どもの面倒を見ながら家事をするのが難しいということだと思うので、このような書き方にしました。
It is hard to raise a child alone.
一人で子どもを育てるのは難しい。
take care of 〜の代わりに watch でもいいと思います。単に「見る」でなく「監視する」という意味が含まれています。
children としましたが、一人っ子であれば a child です。
この場合の「同時進行で」は、単純にat the same time「同時に」で表現できます。
例）
It's difficult to do two things at the same time.
「２つのことを同時進行でやる/同時に２つのことをやるのは難しい」
