"言葉にできない"は「can't be put into words」と言い表せますね。こちらの例はそのままの意味になりますね。
次の例の「unfathomable」は変わって""計り知れない、底知れぬ"または"不可能な"と言う意味になります。

・His feelings for her is unfathomable（彼の彼女へ対する想いは底知れない）
