「タイミングが合った時は」は timing を使わないほうが自然な言い方ができるかと思います。

ーWhen we all happen to be there at the same time, we eat together.
「みんなが同じ時にたまたま居合わせたら、一緒に食事をします。」
when we all happen to be there で「みんながたまたま居合わせたら」

ーWe usually eat separately, but if it works out right, we can all sit down for a meal at the same time.
「いつもは別々に食べるけど、タイミングが合えば、同じ時にみんなで座って食事をします。」
eat separately で「別々に食べる」
if it works out right 「ちょうどうまくいけば」はこの場合「タイミングが合えば」のニュアンスで使えます。
