「conveyor belt」たけの言葉は日本語で「ベルトコンベア」に相当します。
「sushi-go-round」の「-go-round」の部分は「merry-go-round」に関連します。「Merry-go-round」というのは「回転木馬」の意味です。回転木馬は回転ずしのように丸のように回りますので言葉が似ています。
けれども、「merry-go-round」より、「conveyor belt sushi」をよく使われています。

「回転寿し」の正式名称は「① Conveyor belt sushi」になります。
現に、私もこの表現を使っています。
ただし、なかでは「② Revolving sushi」という人もいます。どっちが正しいかは言いませんが、最も使われているのは「① Conveyor belt sushi」に間違いありません。
「お寿司だけじゃないメニューの多様さ」を伝えたいなら：

これは英語かと思っていたのですが、どうもオーストラリアだけの

以前は珍しかった回転寿司ですが、今はある程度の規模の都市であれば、世界中どこでも回転寿司が食べられるようになりましたね。ただ、呼び方は、エリアによってかなり違うように思います。
