TOMOKOさんが書いて下さった "I like a person who can understand subtle meaning of human mind."で意味は通じます。ただ、"I like a person"→ "I like people" （単数形ではなく、複数形の方が自然に聞こえます）"subtle meaning of human mind"→ "the subtle meanings of the human's mind"の方が文法的には良いかと思いました。
