「その人に興味があればするはず」というのを、
「もし彼が、彼女に対して興味をもっているのであれば、話しかけるだろう」という例文にしてみると
"He will talk to her if he's interested in her. "
と表現することが出来ます。
will (do) 〜をするだろう
if もし〜であれば
(be) interested in 〜に興味があれば
同じように、「（もし彼が）ゴルフに興味があればするはずです」は
"He'll do it if he is interested in golf. "
ということができます。

ーIf the person is interested in XX, I would think he would be doing it.
「その人がXXに興味があるなら、それをしているはず」
例：
If he were really interested in golf, he would play it.
