「〜している最中」は
to be in the middle of ...
と言いますが、この場合は次のように言うのが自然です。
例：
I'm sorry if there are lots of mistakes in this letter. I'm still learning English.
「手紙にたくさん間違いがあったらすみません。英語を勉強している最中なので」
to be still leaning English で「英語を学んでいる最中」と表現できます。
