なぜ未来のことなのに、willを使わないのかということを文法的に説明させて頂きたいと思います。
once it is overは、「いったんそれ（＝match）が終わったら」の意味で、副詞節になります。
未来のことなのに何故 現在形なのかと言うと、
「時を表す副詞節は、未来のことでも現在形で表す」というルールがあるからです。
例えば、「明日雨が降ったら家にいることにします」は、
I'll stay home if it rains tomorrow.
と未来のことですけど、
if it rains tomorrowと現在形で表します。
これは、if it rains tomorrowが「副詞節」だからです。
ただ、
「明日雨が降るかどうか分からない」の場合は、
I don't know if it will rain tomorrow.
と表します。
同じif節なのに、この場合はwillを使います。
それはなぜかと言うと、この場合の if it will rain tomorrowは、knowの目的語になっていて、全体として名詞節になっているからです。
名詞節の場合は未来のことは未来で表します。
で、もう一度、
Let me know the results of the match once it's over.
の文に戻ると、
the results of the matchの部分がknowの目的語なので、
once it's overの部分は、副詞節ということになります。
副詞節なので、未来のことでも現在形を使って表すのです。
