Nice talking with you! の返事として、僕はカジュアルな会話では Same here とよく言います。もう少しフォーマルな場では The pleasure was all mine と言ったりします。pleasure は「喜び」とか「楽しみ」の意味なので、直訳すると「喜びは全て私のでした」みたいな変な感じですが、「こちらこそ」という意味で使える表現です。It was a pleasure meeting you という表現もありますね、同じような感じです。
ちなみに、me too も you too も使えると思います。you too の場合は It was nice talking to you, too の略になるのでしょうか。その場合は to you too と言うともう少し自然に感じますが、to もなくても意味は伝わります。me too は「私も」なので、もちろん使えるのですが、懸念としては「私も私と話せて楽しかった」みたいなニュアンスになるのではないかというところだと思いますが、実際のところそこまで考えてネイティブも話してませんので平気です。僕も今初めてちゃんと考えてみたところです。文法的にどっちが正しいとか抜きに、「私も（楽しかった）」という意味で言えば伝わります！

"Nice talking with you too!" is a very plain and simple reply.
There is not a lot of feeling behind this answer so it would be the same as simply saying "Me too" or 「私も」。
You could always add more to your answer by saying something like "
Nice talking with you too! It was a pleasure to meet you". この返事は丁寧な感じがあります。It carries a formal connotation.
”Nice talking with you as well" only has a small difference with the "as well" part which pretty much means the same as "too" and is a slightly polite way to reciprocate an answer.
Much like 「こちらこそ」in Japanese
As for Same(here). I placed the word "here" in parenthesis because just using the word "same" sounds a little too casual and bland(so it's mostly used among friends or people you feel comfortable with) so it's best to use "Same here".
"Nice talking with you too!" が、シンプルで単純な言い方です。

上記の文に " Nice talking with you too! It was a pleasure to meet you". のように更に言葉を付け加えることもできます。
この返事は丁寧な感じがあります。
”Nice talking with you as well" この文は上記の"too"を "as well"に置き換えただけなのでほぼ同じ意味ですが、少し丁寧な印象になります。日本語の「こちらこそ」に似ています。
Same(here). "here" をカッコ内に書きましたが、"same" だけ使うとカジュアルな言い方で少しそっけない感じもあります。

If you want to express that you also enjoyed having a conversation with someone you can use a variety of expressions. You don't always have to mimic the same language used by the person you are speaking with, so if you want to incorporate some new language you can try using this as an opportunity to use new expression words!
Saying "I enjoyed it too" would be the most casual and common way to show a reciprocation of feelings towards the conversation had.

3. Ditto
The word "ditto" is an informal expression that means "same as was done before". It is used to express the same thing that was done or said before is happening again.
次の表現で、自分も会話を楽しんだと伝えることができます：
1. I enjoyed our conversation as well.
［訳］私も会話を楽しみました
2. The pleasure was mine.
［訳］こちらこそ
この表現は「楽しんだのは私の方です」という意味です。
3. Ditto（同上）

この場合の「私も」は、
"(It was nice for) me, too."

"me, too"でも"you, too"でもどちらでも大丈夫です。また、この他にも「私も」という場合、
"Likewise."
"Same here."
"It was nice talking with you as well."
などがあります。
"Same here."は、"Likewise."より少しカジュアルですが、会話でよく使います。丁寧に言いたい場合は、"It was nice talking with you as well."
また、このやり取りは別れ際に行われるので、またその人と話したいと思っていたら、
"Yes, see you later/talk to you later."
と言ってもいいと思います。

というような場面です。
他の表現ということですが、お話しできて楽しかったよ！という気持ちさえ伝われば

など、何でもいいですよ。
会話の後に「私も」と答えたい時に「me too」「same here」や「likewise」で表現することができます。
例文：
「私も！あなたと話しが出来て良かった！」
→「Me too! I’m glad I was able to speak with you!」
→「Same here! I’m glad I was able to speak with you!」
→「Likewise! I’m glad I was able to speak with you!」
「私も！そのレストランはいいと思う」
→「Me too! I think that restaurant is fine」
