There are not so many noodle varieties in Europe (generally just thin, medium and thick), so there is not a single, specific word for them. However, if you say either 'extra thick' or 'very thick', everyone will understand what you mean.
If something is 'bulky' it is bigger than a usual or expected item, or simply: large or unmanageable.
'A grand piano is a bulky item that requires at least four people to move it."
bulky' は「通常のものよりも大きい」、あるいは単に「大きい」「扱いにくい」という意味です。

In this example you are saying that compared to most noodles these are thicker then normal.
The most simple way to say "gokubutomen" is to say "These noodles are very think."
Lastly, if you want to tell a friend the noodles are different from other noodles you can say they are different and add why they are different "These noodles are different, they are thick/big/wide.
"These noodles are thicker then normal"

If you happen to receive some noodles that are not the normal size you are accustomed to, a way to express this would be to simply say, “These noodles are much thicker than usual.” You could also substitute the word “CHUNKY’ for “THICKER”. The word "WIDER" could also be used.
自分の食べ慣れているものよりも太い麺が出てきたら、例えば、“These noodles are much thicker than usual.”(この麺は普通よりもずっと太い)と言えます。
