履歴書はresumeのほかにCV (Curriculum Vitæ) とも言われています。アメリカではresume, イギリスではCVが一般的です。
I’m hoping to change my job and work for a foreign company, so I’m preparing a resume in English.
外資の会社に転職したいので、英語で履歴書を準備しています。

"Would you mind proofreading my resume?" has a nice and polite sound to it.
"Proofreading" simply means checking for errors and mistakes in grammar, spelling, etc.
Teachers often use the word "proofread" in school but in a casual situation where you just want a friend to proofread you could just say:
"Could you please look over my resume?"
But if they "look over" your resume they might just skim through it and not correct it at all.
So you could add "Could you please look over my resume and tell me if you see any errors or mistakes?"

"Proofreading"とは、単に文法、スペルミスなどの間違いや誤りをチェックすることを意味します。
先生は学校で "proofread"という言葉をよく使うことがありますが、友だちに添削して欲しいという状況では、"Could you please look over my resume?"
しかし、彼らがあなたの履歴書見て、まったく修正しないかもしれません。
なのであなたは "Could you please look over my resume and tell me if you see any errors or mistakes?"と付け加え、間違えからアドバイスをもらうことができます。

"I'm hoping to get a job at a foreign company. Could I ask you to proofread my resume?"
ちなみに、アメリカだと、resumeは基本的に1~2ページの履歴書で、CVは数ページにわたるより詳しく書かれるもになります。
To go over something = to review something.
CV = Curriculum vitae = resume
Could you please advise me.... = You ask for advice from someone about something.
A: "I was wondering if you could you please advise me how to improve my CV?"
B; "Sure, no problem!"
To go over something =添削、見直すこと
CV = Curriculum vitae =履歴書
WouldやCouldを用い丁寧に上記のように聞けば問題ないです。

単純にCan you check my resume?でオッケーだと思います。
checkは確認、とか目を通すという意味がありますので何か問題あれば先生が指摘してくれると思います。

To proof read something means to read it through, check for any errors and make the necessary corrections.
英語の先生に履歴書の間違いを正して欲しいなら、次のように言えます。
Can you please help me to edit my resume?（履歴書の修正を手伝ってもらえますか）
Can you please proof read my resume?（私の履歴書をチェックしてもらえますか）
"To proof read" は、文章に誤りがないかチェックし、必要な修正を加えることをいいます。
