The term in popular English is to 'break-up'. This refers to the fact that a couple is seen a whole, and when they split up they 'break' the whole and become single people again and are no longer a couple.

"I broke up with my girlfriend." is an easy way to explain the situation. If however you are married you would say "divorce". "She is now my ex-girlfriend. We were not getting on anymore so we split up". "We separated." "We decided to part ways." "We are no longer together."
